What IS the royal employee system? Look at the end of the episode* for more info :)
Majority of Royal students become assistants. Either that, or they work in outside labs, which occasionally catch some of the overflow/ menial work from the castle.
*Each department (royal guard, royal sciences, royal weathering, and royal caretaking) has a different system, but the royal sciences Dep. is the only relevant department to us right now. The roles in order of most importance are:
the King. Obviously.
Head of the Royal Sciences Department, or "HRSD", often shortened to just "head". This is Gaster's role.
Handmen, often shortened to just "hands". This is Siqua and Alphys's role. These are two trusted and established scientists who help the head, but can also perform independent studies.
Below them are various Assistants, who are also established scientists, but mainly perform the behind the scenes science.
Interns are in the process of becoming scientists.

((After what felt like an eternity, Alphys and Dr. Gaster finally reached the end of the hallway. In front of them was a door, simply labeled "Dr. Archer: Handman". The door opened, and as Alphys braced herself for the struggles of social interaction, her worries suddenly disappeared. The door revealed the most beautiful woman she'd ever seen.))
